100g rolled oats, or GF rolled oats
300ml full-fat milk, or non-dairy equivalent 1-2cm fresh ginger grated 1⁄2 tsp ground ginger 1⁄2 tsp cinnamon
1⁄2 tsp lemon zest
2-3 drops vanilla extract
50ml water

Toppings:

200g fresh strawberries, sliced or quartered 2 tbsp pumpkin seeds
6-8 walnuts or almonds
1⁄4 tsp cinnamon (optional)

Method

1. Place the oats, milk, ginger, cinnamon, vanilla, lemon zest and water in a bowl, mix and refrigerate overnight.

2. In the morning, divide the mixture into two serving bowls.

Wash and pat dry the strawberries, remove the green tops and chop into slices or quarters.

3. Roughly chop the nuts.

4. Divide the strawberries, pumpkin seeds and nuts and place them on top of the oats.

5. Sprinkle on the remaining cinnamon if using.
